Well, the winter weather is around the corner as everyone puts away their Summer outfits and pulls out the sweaters, hats, and scarves. People stop by the coffee shop for a warm cup of Joe or Hot Cocoa for the road. So I thought I’d share a soup recipe for this rainy Friday *It’s currently raining where I’m at*
My Husband says I’m a magical wizard when it comes to working with scraps or whatever we have in the kitchen. So this soup recipe that I’m sharing with you I titled … The Poor Man’s Soup. The ingredients are mainly what’s leftover in the pantry and fridge.
So the ingredients are :
 A can of Chicken Broth –  A can of beans *Any beans is fine just not refried beans* –  Some Celery –  An Onion –  – Scallions “Green Onions” –  Hotdogs –  Carrots –  Some leftover Pasta or Rice –  A Clove or two of Garlic
STEP 1 : Chop up the ingredients. – Coarse chop the onion, carrots, and celery – Thinly slice the scallions “Green Onions” – Slice the Hotdog up into cubes – Slice or Mince the Garlic.
STEP 2 : Heat a soup pot with about a tablespoon of either butter or oil. Add in the Onions, Celery, Carrots, and Garlic. Saute them til Onion softens and Garlic starts to brown. *Don’t worry about the Celery and Carrot they will soften up as the soup boils*
STEP 3 : Toss in the cubed hotdogs and let them cook for a few minutes. Stir to mix everything up.
STEP 4 : Add in the Chicken broth and use the Chicken broth can to add an additional Two cans of Water. Any herbs you have such as Bayleaf, Basil, or Oregano in your pantry can be added in now.
STEP 5 : Seasonings. Add some salt and pepper to taste and toss in any seasonings left in your pantry. I use some Garlic Parsley Salt, a Dash of Paprika, Pinch of Cinnamon, and a Pinch of Red Pepper Flakes for a little kick.
STEP 6 : Taste to check for seasonings and adjust to your taste liking. Bring the soup up to a boil and add in the Pasta or Rice that you have leftover. I recommend using Pasta bcuz rice absorbs alot of the water so your soup will turn into a rice porridge if left on the stove too long.
STEP 7 : Once the Pasta/Rice is cooked and the Soup has come to a boil toss in the sliced Scallions “Green Onions” and Serve with some leftover bread or crackers.
Note : Although I do call this the Poor Man’s Soup if you have leftover turkey from Thanksgiving you can add that into the soup and if you’re not particularly poor then feel free to add to this recipe to your liking. (-__-) I’m currently in a financial low at the moment so Poor Man’s Soup fits us. Well, enjoy and hope you stay warm and dry this Friday.
